Btl case 2006 CHARDONNAY $15 $165 The grapes were fermented in oak and blended with 5% Viognier,and matured for 18 months.The wine is bright with ripe tropical fruit aromas. The palate is full giving a soft ,round finish.
2003 Late Harvest Semillon $12 $120 A rich dense wine with its sweetness coming from extremely ripe grapes. The grapes were left on the vine for extended ripening, then fermented and matured in old oak Barriques for 2 years before bottling without filtering to intensify the flavours .
BALD HILL DRY RED $12 $132 This is a soft light red made from cabernet franc grapes that were only left on skins for a brief period at the beginning of fermentation. It is a slightly bigger style of what you could expect of a rose. The wine chills well for summer drinking.
2004 PETIE VERDOT $20 $220 A rich ,ripe, luscious wine with long, lingering tannins which have softened with a little bottle age. Grapes were hand picked ,open vat fermented with extended time on skins before being basket pressed. The wine matured in barrel for 2 years before being bottled .It will cellar very well.
2005 SHIRAZ $18 $198 An earthy ,spicy wine typical of our style of Shiraz. The maturity of the vines is giving greater depth to the wine. Grapes were hand picked, open vat fermented and basket pressed into 1/3 new American oak, where it was left to mature for 2 years.
2005 CABERNETS $18 $198 A full bodied rich blend of Cabernet Sauvignon & Cabernet Franc. The Cabernet Franc giving a vibrant lift to the Cab Sav. The grapes were hand picked and open vat fermented separately and basket pressed to1/3 new oak predominately French then blended 60-40%
2003 ROCKDELL $25 $275 SHIRAZ / GRENACHE / MOURVEDRE The fragrant nose leads to an explosion of flavour across the palate. A rich,ripe long tasting wine, in the southern French/Spanish style. After fermentation the grapes were left on skins for 1 week, they were matured in a combination of French and American oak1/3 new for 2 years before blending Shiraz35% Grenache 35% and Mourvedre 25% & Petit Verdot 5%
2003 CERVANTES METHODE CHAMPENOISE PINOT NOIR $30 six pack $150 Pinot Noir base wine was given a secondary fermentation in bottle and left on yeast lees for 18 months before being disgorged and sealed . This is a big full sparkling red wine with lots of lingering flavour .
2003 PORT $12 $120 This is a dry style port made from very ripe Grenache and Mourvedre grapes
